MCT "Cook~n~Craft"


GOOD MORNING my sweet friends & welcome to another "Cook~n~Craft!" Today is the day that my team & I share either a snack that we love to have while we are crafting OR any one of our favorite recipes! 

First off, for my card, I always used the larger band-aid from this set so I was happy when I found this that I had stamped, colored & die cut this out already some time ago! I just LOVE my secret stashes that I save & DON'T throw away! ;)  I am really happy with how my card came out!  You can see in my video below how I put this together!

Okay, now onto my recipe for you!  Today I am sharing my "Chickpea Salad" with you! 
Ever since I've become a vegan, I have missing my egg salads along with my tuna salads! So, I searched the web for alternatives & found several recipes using chickpeas/garbanzo beans.  Since I had an idea on what my main ingredient was, I just used what I would've usually used but I totally vegan-ized it! ;) 

This is SUPER EASY!  I just get one can of organic Garbanzo beans & through them in my food processor until it reaches the consistency that you see in this picture!  You can also just smash them up using a fork OR a potato smasher.  


Now, I've learned since becoming a vegan, I use TONS of ingredients to make it YUMMY! lol...
Here is everything I use for this recipe.  Everything is pretty visible in my picture except for the Nutritional Yeast! I LOVE using this because of the B12 it has in it!  I LOVE that I am able to find ingredients that ARE vegan especially this mayo I use!  I get it from Target & the brand is "Hampton Creek" and it's called "Just Mayo"!  I LOVE it because there is no dairy & it's VERY GOOD!
I usually just eye ball everything.  This is how much I use "approximately" of everything:
~ I dice up one pickle
~ Mayo, I don't measure I just put approx 2- 2 1/2 TBLS
~ Ketchup approx 1 TBLS
~ Nutritional Yeast  approx 1 TBLS
~ Paprika 1 tsp
~ Mustard 1 tsp
~ Apple Cider Vinegar 1/2 tsp
~ Diced Jalepenos approx 1/2 of the can (I LOVE HEAT) 
~ Garlic Powder 1 tsp
~ Celery Salt 1 tsp
~ Onion Powder 1 tsp
~ Squeeze 1/2 of the lemon

Now, you adjust this to how you like it.  You don't have to use all of these ingredients, just leave out what you do not like! Do keep in mind, I don't measure anything, so these are all just approximate measurements.  OF COURSE you do not have to use vegan stuff, you can use regular mayo, I just use this stuff because I am a vegan & I LOVE IT! ;) 


After you mix it all up, it will look like this in your sammie!  I just toasted some rye bread, added some spinach along with my chickpea salad & it was one YUMMY lunch!  Then I just HAD to have some organic baked BBQ chippies on the side! ;) 

I wanted to share this particular recipe because it's starting to get warm now & this is a PERFECT meal for this GORGEOUS spring weather we are having! :)

  2. Good Morning Miss Emma!! Your Card is so Adorable...I too love your little bandage....and with you having an all white card really showcases the bandage in a grand make you feel better way. Loving all the dimension too. Outstanding Creataive job!! Your Sandwich looks delish. Awesome healthy ingredients. Great pics too!! Wishing you a Magnificent Monday!! YOU so ROCK!!

  3. Such a awesome card! Miss Emma, I used to be vegan, and pine nuts are a great veggie crunch, and you can make pesto with basil that is joy in every bite, and I made it all the time, and crunch in my salads. Have a great day!
