MCT "Cook~n~Craft!"


GOOD MORNING my sweet friends & welcome to another "Cook~n~Craft!"
Today is the day that my team & I share our FAVORITE recipes along with a project! 


FIRST UP, here is one of MY FAVORITE recipe! :+

My version of a "Potato Salad" ;)


There are times where I am SUPER BUSY....well ALOT of times & I just want to make something super EASY!  Let's just say that I have this a FEW times a week for lunch! ;)
I just took a large russet potato, cut it into french fries.  Then I just tossed them in a little bit of olive oil, added salt & pepper and some onion powder!
Than I put my fries into my Air Fryer for 16 minutes at 400 degrees. I usually stop it 1/2 ways through & just stir them around!  Then you have PERFECT homemade fries! :)
I just throw my fries over any greens that I have.  In this picture, I put them over what I had on my Tower Garden which was spinach, kale & arugula!

This is the recipe for my Vegan Ranch dressing:
~ Just Mayo
~ Apple Cider Vinegar
~ Fresh Lemon
~ Fresh chopped Parsley
~ Fresh chopped Oregano
~ Fresh chopped Chives
~ Salt & Pepper
~ Onion & Garlic Powder

I add everything to a salad dressing shaker bottle & just shake it all up until mixed & just pour it over everything~! :) Last I just topped it with the herbs from my tower garden & it is SUPER YUMMY!

As you can see, I did not include any measurements because I literally do not measure anything.  Just use your best judgement to YOUR liking & I promise you, it is SOOO REFRESHING & I just LOVE it! If you want it more watery for a dressing then use less mayo & it you want to use it as a dip, then add  more mayo!

MCT "Cook~n~Craft!"

GOOD MORNING my sweet friends & welcome back to another "Cook~n~Craft".  I just LOVE this day because not only does my team have a project for you, but we ALSO have one of our FAVORITE recipes to share with you! :) 

I wanted to share with you this YUMMY recipe that I found HERE!  This recipe is not only my FAVORITE but it's SUPER EASY!  I've been making it for a few weeks (on & off) and it's the PERFECT snack & an "on the go" breakfast! 
I followed the recipe but added some vanilla extract & cinnamon! To make these in a way that I can have them to, I used "Carob Chips" (which are vegan)  instead of regular chocolate chips! There really isn't any difference in taste, so the boys don't mind it at all,  they LOVE "ANY" kind of chocolate! lol.......  
I have to say that these are VERY YUMMY & the perfect snack for your kid's lunch as well! Next time I want to add walnuts or pecans because I love the extra crunch! ;) If you would like to make this recipe too, you can see the video for it HERE! :)

MCT "Cook~n~Craft"


GOOD MORNING my sweet friends & welcome back to another "Cook~n~Craft". 
I am SUPER HAPPY about today because my team & I are sharing a project of our choice along with one of our FAVORITE recipes!

First up, here is my card I made today! :)  Since it is raining in some parts of our world, I thought this was the perfect card for someone who is under the weather.  I colored in my umbrella using my FAVORITE "Zig Clean Color Brush" markers!"  These are my FAVORITE markers because you can get EVERY color for around 10ish, which was way more affordable for me.  I REALLY tried to grow my copic collection, but realized that there was NO WAY I would be able to afford EVERY copic color, so I just stuck with the handful of colors I already had & purchased my ZIG markers!  The brand of watercolor paper I used was CANSON .
I REALLY LOVE how my card came out! :)

Okay, now onto a couple of my FAVORITE recipes I am enjoying right now! :) 

First is my "Protein Pancakes" that I have made for my boys this summer! I would have these ready for them when they came back from their workouts every morning!  They either had it BEFORE or after each daily workout.  These are SOOO YUMMY & not to mention these are VEGAN & they are guilt free pancakes! :) You can see recipe below this picture.


Protein Pancakes
~ one ripe banana
~ 1 tsp vanilla extract
~ 2 tbls coconut nectar or maple syrup
~ 1 1/4 cup oat flour
~ 1 tsp baking powder
~ 1 tbls flaxseed meal
~ 1 scoop protein powder (I use THIS one)
~ 1 1/4 cup almond milk or any other non-dairy milk

If you do not have oat flour, you can just blend up some regular oats! Throw everything in the blender, then cook them! :)  SUPER EASY & SUPER YUMMY  Now, you can totally omit the protein powder & have these without it & they would STILL be YUMMY! :) 

For my boys, I would give them a green smoothie with their pancakes!  I make sure they have ALL the nutrition they need especially after their high intensity workouts! ;)

I also enjoyed the pancakes along with my boys, but I made a "Matcha Green Tea Latte" for me! ;)
I LOVE this stuff because there are several health benefits! Here are just a few:

~ high in antioxidants
~ boosts memory & concentration
~ increases energy levels & endurance
~ burns calories
~ detoxifies the body
~ fortifies the immune system
~ improves cholesterol

Now, there are a few more health benefits, but these are the ones that are important to me!

Matcha Green Tea Latte
~ 1 tsp Match Green Tea Powder (I use THIS one)
~ 1 tsp Pumpkin Spice Powder
~ Maple Syrup to sweeten
~ 1/4 - 1/2 cup hot water
~ 1/2 cup of almond milk (or any non-dairy milk)

I just blend everything together in my nutra bullet & it comes out nice & frothy! ;)  Last I just add a few shakes of cinnamon on top~!  This is perfect with my protein pancakes!  Now, keep in mind, you don't have to follow this recipe to the tee! Feel free to adjust it to YOUR liking!

MCT "Cook~N~Craft"


GOOD MORNING my sweet friends & welcome back to another "Cook~N~Craft!"
I just LOVE today because this is the day that my team & I share our FAVORITE recipes along with a project!  Since I was gone the entire weekend for a baseball tournament with my boys, I was not able to do a project :(  BUT, I am sharing one of my FAVORITE SUPER QUICK desserts that I have most of the time as a snack! ;)  If you are new to my blog, I have been a vegan for 2 years now & the one thing that I used to have ALOT is ice cream!  So I just now make my own & it's SUPER SIMPLE to make! 


I was craving some caramel sauce to top my ice cream with & I came across this recipe in one of my vegan cookbooks (Minimalist Baker) "Everyday Cooking"! It is a "Coconut Caramel Sauce" that is super EASY & DELICIOUS :) You can see the recipes below!


"Ice Cream"
~ 3 frozen bananas
~ Vanilla Bean Powder 
~ 2 pitted Medjul Dates
~ little bit of plant based milk (I used almond milk)

Blend everything together in a high powered blender OR food processor! Serve it immediately OR put in the freezer for a bit while you are making your caramel sauce!

"Coconut Caramel Sauce"
~ 1 cup coconut sugar
~ 1/4 cup filtered water
~ 1/2 tsp pure vanilla extract
~ 1/4 tsp sea salt
~ 2/3 cup of coconut cream (NOT coconut milk)
I get my coconut cream from Trader Joes!

Place coconut sugar and water in small saucepan. Cook over med. heat for 9-11 minutes, swirling the pan but NOT stirring. Reduce heat slightly if the mixture is bubbling too rapidly (remove from heat if  if it begins to  smelling burnt)  When caramelized, it will have a strong caramel scent &  dark amber color.  Once finished cooking, remove the pan from the heat & immediately add the vanilla, salt, and coconut cream.  Stir to combine.  Let cool slightly, then transfer to a clean mason jar and let cool completely before covering / sealing it! 
The NICE part about this recipe is that you can store it in your refrigerator 2-3 weeks! :)  Its a WIN-WIN all the way around! ;)

MCT "Cook~n~Craft"


GOOD MORNING my sweet friends & welcome to another "Cook~n~Craft!"

I just LOVE this day because we get to share our FAVORITE recipes with YOU! :) I don't have an actual project, but I DO have a recipe! ;)  If you are new to my blog, I am a vegan & I will be sharing vegan recipes!  My intentions are NOT to convince everyone to become vegan, this is just how I eat & I want you to see that vegan food is NOT boring! ;)  Today I am sharing a vegan pizza recipe!  This is the YUMMIEST pizza EVER!  Since I have been a vegan for almost 2 years now, I am learning MORE & MORE recipes! 
Since becoming a vegan, the ONE thing I have missed was CHEESE!  I have tried a few recipes & this by far is my FAVORITE so far!  It is a "Tofu Ricotta Cheese" that I used for my pizza!

Here is the recipe:
~ Vegan Pizza Dough (from Trader Joe's, I like the garlic & herb one. I get the whole wheat for the boys)
~ Pizza sauce of your choice
~ Any veggies or whatever toppings you prefer!
(For mine I used tomotoes, mushrooms, olives, onions, fresh italian oregano, fresh basil & fresh parsley)

Tofu Ricotta Cheese (from Minimalist Baker's Everyday Cooking Book)
~ 6 oz extra firm tofu (drained/pressed)
~ 1 1/2 lemons juiced or 3 tablespoons
~ 2 Tbsp nutritional yeast
~ 1/2 cup loosely packed fresh basil
~ 1 1/2 tsp dried oregano
~ 1/2 tsp each salt & pepper
~ 6 Tbsp vegan parmesan
(Vegan parmesan: 3/4 cup raw cashews, 3 Tbsp nutritional yeast, 3/4 tsp salt, 3/4 tsp garlic powder. Mix all together in food processor to a fine meal.)

First I prepare the tofu ricotta.  Put all of the ingredients for the cheese in your blender or food processor.  Pulse to combine, it should be semipureed with bits of basil still intact. Taste & adjust the seasonings as needed! Put in the refrigerator to chill while preparing the rest. 
While that is chilling, I remove the dough from the bag & let it rest for 20 minutes. Oh don't forget to pre-heat your oven!  My dough calls for me to preheat my over to 400 degrees. So double check the degrees for your dough that you will be using!  After the 20 minutes, I roll out my dough, then add the sauce.  I like to sprinkle some of my vegan parmesan on top of my sauce before I add the rest. 
Next I put dollops of the ricotta cheese onto the sauce.  Then I add the rest of my ingredients except for the fresh herbs.  After I cook my pizza for about 10 minutes, then I take it out of the oven & lastly I add my fresh herbs!  Then you will have a FRESH & gourmet tasting pizza!  
P.S. all of the fresh herbs & tomatoes were from my garden! :)

This was one of the pizzas I made when Baby Aaron had a few of his friends over & they tried it & ABSOLUTELY LOVED it!!! Since I made 5 pizzas that night, I didn't add the veggies, it was just with the tofu cheese & they STILL LOVED it!  Of course the other 4 pizzas had pepperoni, but  they are always wanting to try my vegan cooking when they come over so I thought this was perfect for them to try! ;)
