MCT "Cook~n~Craft"


GOOD  MORNING my sweet friends & welcome to another "Cook~n~Craft"!!! Can you even BELIEVE we are ALREADY in "MAY"?????? 

Today is one of my FAVORITE days because not ONLY do we share a FUN project, BUT we ALSO share one of our FAVORITE recipes with you as well!  Before I get to my recipe, I just wanted to share with you my simple card I created for a friend just to remind her to "Stay Strong".

Now onto my recipe!
When I became vegan, I SOOO MISSED my cream sauces! :(  This is what I LOVE about the internet because you can find so much helpful information AND inspiration!  I just needed to know what ingredients would make up a "cream sauce" & once I found out, I went to work! ;)  This is what I used to make my "Lemon & Garlic Cream Sauce" First, I just wanted to let you know that I do not measure anything especially if I am making it for the first time! This was an experiment & I was REALLY happy with how it came out!  I will give you the ingredients & you go ahead & adjust it to "YOUR" liking! ;) 

~ 1 - 1 1/2 cup of Brazil Nuts (you can also use cashews) soak them overnight OR I just boil water & cover them with the water for 15 min! 
~ Fresh Garlic
~ Fresh Lemon (I used the juice from one whole lemon)
~ Onion Powder
~ Garlic Powder
~ About 1/2 - 1 cup of Soy Milk 
~ About 1 TBLS of Nutritional Yeast
~ Pink Himalayan Salt
~ White Pepper

I just though everything in a high speed blender & it was DUNZO! :)  Like I said, you can adjust this recipe any way YOU like!  Last just pour it over your FAVE pasta, I used fettuccine noodles for mine!  Then I just topped it off with some chili peppers & fresh arugula from my tower garden! :)  SOOO YUMMY!  I LOVE being a vegan because I am having SO MUCH FUN testing new recipes AND the fact that my family is LOVING them too! :)

  2. That recipe is amazing. I love coconut milk. It is liquid at 70 degrees, but I love the thick cream at the top to whip and sweeten for whipping cream, the rest to thicken curry. I am gluten intolerant, and lactose isn't my friend either. I love almond cheese, unsweetened almond milk, or hemp milk. My body loved being vegan. I hope your friend will feel stronger with such a pretty card.
