MCT "Made in Minutes"

GOOD MORNING my sweet friends & welcome to another "Made in Minutes!" 

First off, I know I said that I would be back today, BUT, I totally forgot that I was helping my Mom make tamales over the weekend!  I was SUPER EXCITED because we made "VEGAN TAMALES".
I am SO BUMMED because I did not take any pictures :(  My parents usually order tamales for Christmas Eve, but the place they order from does not make vegan ones.  So we were experimenting & they came out SOOOO YUMMY!  We are going to make a few dozen of them next weekend & freeze them so we can have them for Christmas Eve. We have to make sure we have enough because both of my boys will be eating them with me since we are the only vegans in the entire family.  I love our set up because we celebrate with my parents & 2 sisters, nieces & nephews on Christmas Eve & then on Christmas day, we all spend it at our own houses.

 We like to make extra tamales because it's a tradition in my house that we have tamales,  Christmas cookies & mexican hot chocolate for breakfast on Christmas morning! :)

My Mom has been so AWESOME to make sure my boys & I have vegan options when there are family functions! :) 

Here is the cookbook where I got the recipe from!  We made the potato & chorizo tamales!  This cookbook has some AMAZING recipes.  If you are interested, I picked it up HERE!  When we make the final batch I will make sure to take pictures & post them here so you can see! :)

Good Morning Miss Emma....How Fun was your Week-end ..... no worries about not posting a project....your cooking share is awesome and glad you had so much Cooking fun with your mom....and how cool that you found a vegan Tamale recipe and better yet that it was yummy!! I had to google Mexican hot chocolate to see what the difference is from regular hot chocolate. lol I'll have to add a pinch of cayenne/chilli pepper to the hubby's next time to see what he thinks (cus HE is the guinea pig, of course! lol). So glad you got to cherish time with your mom. So important! :-)

  3. Tamales sound so good.... I have never tried vegan tamales! I helped make tamales once and I just remember how much work they were.... but so yummy! I do have a local place I like to buy them at, but they are not vegan.

  6. I LOVE Tamales! They are always so good homemade! I use to date a guy whose sisters would make them for New Years - They made tons of them and everyone would come together for New Years... They teased me because I can't handle spicy stuff, but they would always try and make a couple for me without the spice so I could enjoy it with them.... I'm glad you guys found a recipe that works for you - :) Have a great Day!
