MCT "Cook~N~Craft"


GOOD MORNING my sweet friends & welcome back to another "Cook~N~Craft!"
I just LOVE today because this is the day that my team & I share our FAVORITE recipes along with a project!  Since I was gone the entire weekend for a baseball tournament with my boys, I was not able to do a project :(  BUT, I am sharing one of my FAVORITE SUPER QUICK desserts that I have most of the time as a snack! ;)  If you are new to my blog, I have been a vegan for 2 years now & the one thing that I used to have ALOT is ice cream!  So I just now make my own & it's SUPER SIMPLE to make! 


I was craving some caramel sauce to top my ice cream with & I came across this recipe in one of my vegan cookbooks (Minimalist Baker) "Everyday Cooking"! It is a "Coconut Caramel Sauce" that is super EASY & DELICIOUS :) You can see the recipes below!


"Ice Cream"
~ 3 frozen bananas
~ Vanilla Bean Powder 
~ 2 pitted Medjul Dates
~ little bit of plant based milk (I used almond milk)

Blend everything together in a high powered blender OR food processor! Serve it immediately OR put in the freezer for a bit while you are making your caramel sauce!

"Coconut Caramel Sauce"
~ 1 cup coconut sugar
~ 1/4 cup filtered water
~ 1/2 tsp pure vanilla extract
~ 1/4 tsp sea salt
~ 2/3 cup of coconut cream (NOT coconut milk)
I get my coconut cream from Trader Joes!

Place coconut sugar and water in small saucepan. Cook over med. heat for 9-11 minutes, swirling the pan but NOT stirring. Reduce heat slightly if the mixture is bubbling too rapidly (remove from heat if  if it begins to  smelling burnt)  When caramelized, it will have a strong caramel scent &  dark amber color.  Once finished cooking, remove the pan from the heat & immediately add the vanilla, salt, and coconut cream.  Stir to combine.  Let cool slightly, then transfer to a clean mason jar and let cool completely before covering / sealing it! 
The NICE part about this recipe is that you can store it in your refrigerator 2-3 weeks! :)  Its a WIN-WIN all the way around! ;)

  1. Good Morning Miss Emma! OOOH Your Sundae looks so yummy and your recipe is amazing.....gosh who knew all this goodness could be created Vegan style. Awesome pics and great recipe shares.....Sound like you had a Funtabulous Baseball Tournament Week=end....how awesome....bet you took lots of pics for srapping the little things!! Definitely Family Fun Times to cherrish. TFS!!

  3. All the food looks yummy. I love your ice cream recipe. I have issues with milk ... and ice cream is my main vice. I might have to try your recipe ... thank you

  4. Your icecream looks so yummy! I never would have guessed you could make it from frozen bananas. The caramel sauce looks awesome also. The team had some sweet cards and you all had some interesting foods to share. How fun!
