MCT "Cook~n~Craft!"

Good morning my sweet friends & welcome back to another "Cook~n~Craft!"
For those of you who are new to my blog, on the 1st Monday of each month my team & I share with you are FAVORITE quick meals / snacks we create with a busy schedule! ;) 

I have a SUPER QUICK & EASY snack for you today.  When I first transitioned to a vegan, the ONE thing that I did miss was my homemade Whip Cream!  So, after trying a few different non-dairy whip creams, I just decided to throw this together & this is my FAVORITE one!! :)  This is what I use:

~ One can of THAI Coconut Milk

Just so you know, you do NOT have to use these EXACT name brands, BUT this Coconut Milk seems to work the BEST & just make sure you use some kind of REAL MAPLE syrup & not a regular pancake syrup! ;) 

When I know I want whip cream, I put one can of the coconut milk in the refrigerator over night, that works BEST!  When you take it out of the refrigerator, DON'T shake it!  When you open up the can ONLY scoop out the thick portion of it! Do NOT use the liquid only because you WILL have watery whip cream & that is not good!  Put it into a mixing bowl & then add your maple syrup & vanilla then blend it up! I just use a hand mixer OR I just throw it in a blender! Now, I used around 1 TBLS of the maple syrup & 1 TSP of the vanilla.  BUT, please just use your measurements because mine might not work for you!  Definitely adjust it to YOUR liking! 

Look how AMAZING this looks???  I just LOVE this & it comes out so creamy & fluffy!  This will stay in your refrigerator for up to 3 days, which mine NEVER does!!! lol.... We eat it the same day! ;) 



Here is my vegan whip cream on some fresh strawberries & blueberries....my FAVORITE combination for a quick & YUMMY snack! :) 



Unfortunately I don't have a project for you today :(  I have been sick since last week & I finally broke down and went to see my Dr.!  I was trying to "MAN UP" but I couldn't stand my ear pain :(  I ended up having a nasty ear infection.  Now I am at the end of it & just battling this cough! My poor hubby was off last week with a sinus infection :(  We are just praying our boys stay healthy!  Our symptoms started after we both got the flu shot!!! I feel like I get sick EVERY YEAR after getting that shot!!! I should know better by now! lol.... ;)

MCT "Cook~n~Craft!"

GOOD MORNING my sweet friends & welcome back to another "Cook~n~Craft".  I just LOVE this day because not only does my team have a project for you, but we ALSO have one of our FAVORITE recipes to share with you! :) 

I wanted to share with you this YUMMY recipe that I found HERE!  This recipe is not only my FAVORITE but it's SUPER EASY!  I've been making it for a few weeks (on & off) and it's the PERFECT snack & an "on the go" breakfast! 
I followed the recipe but added some vanilla extract & cinnamon! To make these in a way that I can have them to, I used "Carob Chips" (which are vegan)  instead of regular chocolate chips! There really isn't any difference in taste, so the boys don't mind it at all,  they LOVE "ANY" kind of chocolate! lol.......  
I have to say that these are VERY YUMMY & the perfect snack for your kid's lunch as well! Next time I want to add walnuts or pecans because I love the extra crunch! ;) If you would like to make this recipe too, you can see the video for it HERE! :)
